Vanilla Dream Ice Cream
/Raw ice cream is hard to sweeten because you really need to heat it to get the sugar to dissolve. Maple syrup or honey are what people usually use in raw ice cream, but you what you get is maple flavored ice cream or honey flavored ice cream. I wanted a true vanilla ice cream!
With a little experimenting, I developed a classic vanilla ice cream recipe for lightly sweetened raw cream. Using a combination of maple syrup and honey prevented the ice cream from tasting like either one and let the vanilla shine through. Enjoy!
Vanilla Dream Ice Cream
Whisk together:
1/8c maple syrup
1/2 tsp raw honey
1 1/2 tsp vanilla, preferably homemade*
1/8 tsp sea salt
Add and thoroughly whisk:
1 pint sweet, delicious raw cream
Refrigerate at least 2 hours to allow flavors to infuse the cream. Make ice cream according to ice cream maker's instructions.
*There is just no substitute for homemade vanilla! If you insist on store bought, get a good one. Cheap or imitation vanilla tastes really awful in this recipe! Try Nielsen-Massey Madagascar Bourbon, Sonoma Syrup Vanilla Extract Blend, or Penzy's.
