Finally! The wild raspberries have ripened! Every year, I anxiously await them and giggle with delight when I finally eat them.
Wild raspberries have a burst of tangy, complex flavor completely unmatched by any cultivated variety. Best of all, if you pick them yourself, you will be delightfully surprised at the distinctly different flavor each bush has. The first time I noticed this, I could hardly pull myself away from tramping all over the property tasting every bush I could find. Comparing and contrasting such deliciousness is so much fun!
Aside from straight off the bush, one of may favorite ways to eat wild raspberries is as a raw raspberry sauce over some good cheese. Just mash up the raspberries with a little raw honey. Tastes amazing!
